Light'n'Breezy (Alcohol free)

My alcohol free version of a Dark'n'Stormy.

INGREDIENTS

• 60ml/2fl oz lime juice
• 1 tsp black treacle
• handful mint leaves
• ginger beer, to taste

GARNISH

• Crystallised ginger
• Lime zest

METHOD

1. Pour the lime juice, black treacle and mint leaves into a rocks glass and muddle.
2. Fill the glass with ice and top with ginger beer.
3. Garnish with lime peel and crystallised ginger.
